BACON! Makes everything taste better. This is a fact. I love this dish because it can be side or you can eat a whole bowl of it as a meal and you will feel completely satisfied. I used center cut bacon but you can use which ever cut to your desire, even turkey, although I cannot guarantee the result. :)
As you can see in the picture, I did also cook up some shrimp to go with the beans, It is only because the man I married believes a full meal must contain more than one dish. *sigh* However! Even he admitted that the beans were the star of the show!
Prep time: 10 minutes (if you're using canned beans)
Cook time: 10 - 15 minutes
You will need:
3 cups of navy beans
3 strips of bacon (chopped into small bits)
1 cup of thawed, frozen spinach (give it a rough chop)
1/2 medium sized red onion (finely chopped)
salt to taste
juice of 2 generous wedges of lemon
If you are using dried beans, you will need to soak them overnight, then cook them. I cooked mine in a slow cooker, so very low maintenance on my part.
Cook bacon until crispy. This should take about 2 - 3 minutes, do not let the bacon burn, that is food abuse. Add onion, cook until translucent, about 5 - 7 minutes. Stir occasionally. Add spinach and beans, you pretty much just want this to be heated through, probably 2 - 3 minutes. Salt to taste. Squeeze lemon juice into the bean mixture and stir.
